INTRODUCTION

Olive tree, believed to have originated in the Middle East or Asia Minor, reached Portugal between the seventh and third century B.C. as part of the vigorous trade between Mediterranean nations of the time.

 

Olive oil is a product with a high nutritional and dietetic value, an integral part of the most demanding gastronomy and a raw material for the pharmaceutical and beauty industries. Olive oil is made up of fatty acids, in particular oleic, linoleic and palmitic acids, vitamins E, D, K and carotene (provitamin A). But olive oil also includes substances that give it its flavours, aromas and colour, and it is very rich in anti-oxidant compounds.
